You may often have to have breakfast out and be stuck for ideas as to what to take. My suggestion for today is a very complete breakfast you can easily prepare at home: yoghurt with homemade granola and homemade strawberry jam. It is a very simple breakfast which is ideal for packing in a Lunch&Go container.
If you don’t want to bother making the jam, you can of course use shop-bought jam! But don’t overlook the granola recipe – it is simply delicious. Whenever I make it, I store it in a Grand Chef Cube container, which keeps it perfectly it for weeks.
- 4 spoonfuls butter
- 4 spoonfuls honey
- 4 teaspoons cinnamon
- 100 g brown sugar
- 2 spoonfuls water
- 360 g of oats
- 100 g of sliced almonds
- 200 g pecans
Heat the oven to 150°.
Heat the butter in a saucepan on a low heat along with the honey. When the butter has melted, remove from the heat and add the sugar and water. Stir very well until smooth. Add the cinnamon and stir again.
Put the oats, almonds and walnuts in a bowl. Add the butter mixture and stir well.
Spread the mixture onto a baking tray. Bake for about 25 minutes or until golden brown. Every 5 minutes, open the oven and stir to prevent too many clumps forming. Allow to cool in the tray, and finally, store in your Grand Chef Cube container.
Homemade Strawberry Jam
- 1 kg strawberries
- 700 g sugar
- Juice of a lemon
Wash the strawberries, remove the stalk and chop. Put them in a bowl.
Add the lemon juice and sugar and mix very well. Leave to stand over night.
The next day, heat the mixture in a pan on a high heat until it begins to boil. Then reduce the heat and cook slowly on a medium heat until the mixture reduces (around half an hour). It is important to stir from time to time to prevent sticking.
As you heat it, a froth will form on the surface which it is advisable to carefully skim off.
When your jam has reached the perfect texture, remove it from the heat and pour it immediately into sterilized glass jars. They need to be closed immediately and placed upside down so as to create a vacuum.
In order to prepare the glass, first put a layer of your favourite yoghurt (I use Greek yoghurt). Then add a spoonful of jam. Cover with more yoghurt. Add three heaped spoonfuls of granola and, finally, one more teaspoonful of jam. Stir well and enjoy!
