Strawberries soup with ginger
Ingredients (for 4 persons):
800 gr of strawberries
80 gr of fresh ginger
1.5dl of cane sugar syrup
Peel the ginger and cut it in little sticks (size of a match).
Pour the cane sugar syrup in a saucepan and let it simmer. Bring to boil, reckon 10 minutes, with small tremors until obtaining a thick syrup. Remove from heat.
Clean the strawberries, take off the queues / green parts and cut in little cubes. Add them in the warm syrup and let it cool. To serve at room temperature or after a few hours in the fridge.
