« Coco » chicken
coco chicken


Ingredients (for 4 persons):

2 tablespoons of butter
2 tablepoons of olive oil
8 pieces of chicken
2 chopped shallots
1 clove of garlic
1 small piece of fresh peeled ginger
25cl of coco milk
Salt and peeper

To serve
50 gr of coconut cut in small pieces and grilled


Preparation method

In a big saucepan, heat the butter and the olive oil. Add the chicken and let it for 3 or 4 minutes until brown on all sides.
With an skimmer, remove the chicken from the saucepan and keep it warm. Add the shallots, the garlic and the ginger in the saucepan and fry during 2 minutes. Put the chicken again and while stirring, add the coco milk and season it.

Let it simmer, without covering, during 5 minutes until the chicken is tender.

Sprinkle with grilled coconut and serve with thai rice.

The coco milk can be replaced by a low fat cream and the coconut by almonds.
